five things

did ya miss me?

can you believe little man is 6 weeks tomorrow?!!
I still feel like we’re babysitting, it’s hard to take in that he’s ours to keep!

6 weeks old

my brain is kinda mushy
the fact it’s take {literally} h.o.u.r.s to write this post is testament to that!
hopefully I’ll get back in the blogging groove

newborn clothe nappy{this limited edition tots bots nappy}

whilst on the lookout for some newborn clothe nappies as the ‘birth to potty’ ones we bought didn’t have mr ” long and skinny ” william in mind!

sensationail 2 week manicure scarlet red{the 2 week manicure – at home edition}

cannot wait to try this out!  I picked up the sensationail starter kit in scarlet red last weekend but our week hasn’t gone quite to plan <– read that as baby meltdowns most evenings causing dinner to be eaten at 9pm+

But I’m determined this Sunday should include fresh coffee and popping my sensationail cherry, I’ll report back.

I also fancy this coral shade and unusually for me this pale pink and their teal-esque offering

ombre curls{ombre, ombre, ombre}

I have admired it from afar for a long-time but alas my hair was short and already heavily highlighted so I couldn’t figure out how it would work.  However, now my hair is closer to my natural, boring as dishwater, shade I’ve decided to jump in head first!

Cut wise I have no idea, I might just trim and hangout with long hair some more.

Last weekend I picked up a few treats from Next.  Mark mocked me for my love of holey jumpers, to him the holes make them useless aka the chocolate teapot of the jumper world.  But both William and I love it although for different reasons, someones figuring out how to grab thing!

2012 recipe challenge: young nettles with scrambled egg

Young nettles with Scrambled egg but with Spinach

Helpful Hints

1. The idea of nettles sounded cool, scary, painful – pretty much in that order.  Then I noticed the recipe gave me an instant get out of jail card.  Use spinach instead!!

2.  We had this for an quick and easy dinner but it would make a fabulous weekend breakfast.

3.  Tesco finest has a lovely Mediterranean bread which was delicious with it.

6.  I scaled back the eggs as there were only the two of us {but it was for dinner}, instead I used 4 whole eggs and 2 egg whites.

Recipe

Ingredients:

  • 4 thick slices of white farmhouse bread
  • Extra virgin olive oil for brushing
  • 9 eggs
  • 50g unsalted butter
  • 2 handfuls of young nettles
  • 2tbsp double cream
  • Salt and Pepper
  • {Smoked streaky bacon}

Method:

  • Begin by blanching the nettles in boiling water for 1 minute and draining.  Remove as much moisture as possible.
  • Brush both sides of the bread and place in a hot, dry pan over a medium heat to toast.  Once brown turn over and toast the other side.
  • {Optional} – once the toast is cooked pop the streaky bacon in the hot frying pan to cook whilst you concentrate on the eggs, turning halfway through.
  • Put the eggs into a non-stick pan with the butter, a pinch of salt and pepper and the nettles.  Whisk and cook over a low heat until the butter is melted.  Make sure the cream is close to hand and the toast is plated up ready to go.
  • Turn the heat up and keep stirring the eggs, they will then scramble.  When they are still quite runny but thick and lighter in colour remove from the heat.
  • Stir in the cream to stop the cooking process.  Spoon over the toast, {top with bacon} and serve.
